Chefs Darren Clay and Johnny Bridge, from the Food Services’ Residence Dining team, represented UBC at the “Flavours of Canada” event on March 13 at the University of Massachusetts (UMass) Amherst. At this annual event, which showcases cuisine from Canadian universities, Darren and Johnny shared a BC-focused menu featuring beet poké, maple salmon and Nanaimo bars.
